Want to celebrate Pancake Day and make some delicious pancakes? Why not try something a little bit different and have a go at our Banana Pancake recipe? It’s nice and easy and can be made with the whole family and you get to enjoy some lovely fresh fruit at the same time!

Banana Pancakes Recipe

Ingredients

100g cottage cheese

100g sour cream

1/4 teaspoon vanilla

1/4 teaspoon salt

2 large eggs

100g flour

1/2 teaspoon baking powder

1 banana, peeled and sliced

1 tablespoon oil

2 teaspoons lemon juice

Instructions

  1. Blend together the cottage cheese, sour cream, vanilla extract and salt in a blender until completely smooth.
  2. Beat eggs in a medium bowl until frothy. Beat in the cottage cheese and sour cream mixture.
  3. In a small bowl, combine the flour and baking powder. Gradually stir into the mixture, try not to overmix.
  4. On a separate plate, lightly dust the banana slices with some flour and set aside.
  5. Brush a frying pan with a small amount of vegetable oil. Heat this over a low heat. Drop batter by spoonfuls onto the hot pan. Immediately top each.
  6. Spoon a small amount of batter on top of each banana slice. Cook the pancakes for 1.5-2 minutes or until bubbles form on the surface.
  7. Turn the pancakes over and cook another minute or so unbtil golden and puffed. Remove pancakes to a plate. Lightly re-oil the frying pan as needed and continue to cook the remaining pancakes.
  8. Drizzle some lemon on top of the finished pancakes and enjoy!

Pancake Day is part of the Lent celebrations and always falls the Tuesday before they begin. This means Pancake Day is always 47 days before Easter Sunday. It has lots of different names such as Shrove Tuesday in the United Kingdom, Mardis Gras in France and Fastnacht Day in Germany. 

During Pancake Day in the United Kingdom, it’s estimated that we use over 52million eggs each Pancake Day. Along with eating them, some villages also hold traditional Pancake Day Races where people run a short course while holding a frying pan and flipping their pancake!

There have also been some unusual world records set around pancakes. For example, the most pancake flips in two minutes has been set at 349, which is nearly 3 flips every second, and the largest pancake ever made was over 15metres wide and weighed over 2.5 kilograms!
